Thai-Style Guacamole

Serves: 2 cups
  • 2 ripe avocados, peeled and pitted
  • Juice of 1 lemon
  • 1 large shallot, finely diced
  • 2 tablespoons finely chopped fresh cilantro
  • 1 tablespoon finely chopped fresh mint
  • 1 to 2 Thai chili peppers, seeds and membranes removed, finely diced
  • 1 to 2 teaspoons fish sauce
  • ¼ teaspoon kosher salt
  • 1 teaspoon freshly coarsely ground black pepper
  1. Place avocados and lemon juice in a bowl and roughly mash with a fork.
  2. Stir in shallot, cilantro, mint, chili peppers, fish sauce, salt and black pepper.
  3. Taste and adjust seasoning if necessary.
