Thai-Style Guacamole

Serves: 2 cups
- 2 ripe avocados, peeled and pitted
- Juice of 1 lemon
- 1 large shallot, finely diced
- 2 tablespoons finely chopped fresh cilantro
- 1 tablespoon finely chopped fresh mint
- 1 to 2 Thai chili peppers, seeds and membranes removed, finely diced
- 1 to 2 teaspoons fish sauce
- ¼ teaspoon kosher salt
- 1 teaspoon freshly coarsely ground black pepper
- Place avocados and lemon juice in a bowl and roughly mash with a fork.
- Stir in shallot, cilantro, mint, chili peppers, fish sauce, salt and black pepper.
- Taste and adjust seasoning if necessary.
