Guacamole and Salsa

- 2 ripe avocados, peeled and pitted (I prefer California Haas avocados)
- Juice of 1 lime, or to taste
- ¼ cup finely diced red onion
- ¼ cup finely chopped fresh cilantro leaves
- 1 jalapeno, minced
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Place avocados and lime juice in a bowl and roughly mash with a fork
- Stir in onion, cilantro and jalapeno
- Season with salt and pepper
- Taste and adjust seasoning as needed
